The cuisine of Sri Lanka incorporates basic boiled red rice into many of its dishes, but balances the strong flavor of the red rice with the sweet notes of coconut for a distinctive taste.

 

Nutritional Value of Rice & Health Benefits 

One cup of brown rice cooked (195g) has 216.4 calories 1.7g of fat, 0.64g of monosaturated fat, 0.63g of polyunsaturated fat, 0.35g of saturated fat, 44.8g of carbohydrate, 5.03g of protein, 0.66g of fibre, O.19g mg of thiamine (B1), 0.05mg of riboflavin, 2.98mg of nicotinic acid, 0.28mg of pantothenic acid, 0.28mg of vit B 6, 7.80mg of folio acid, 19.50mg of calcium 0.82 mg of iron, and 1.23mg of zinc.

Brown unpolished rice is a healthy food because it provides us with rice bran which contains b-sitosterol, a naturally occurring substance which lowers blood cholesterol. It can reduce the risk of bowel cancer and it diminishes the frequently of kidney and bladder stone formation in people who are prone to kidney and bladder stones.

Brown rice can help insulin dependant diabetes patients to normalize the blood sugar levels. It can stimulate the production mucus which has been shown to fight diarrhoeal infections. Therefore rice should be a staple food for all of us.
Ingredients -  All Natural  Rosa Kekulu - Oryza Sativa (Brown) Rice

Cooking Instructions
*1 cup of rice in a bowl and wash the rice lightly once.  Place in the cooking pot, add 3-3 1/2 cups cold water.
*Add a little salt and/or a pinch of ghee, butter or coconut or olive oil. For added flavor add peppercorns, cloves, cardamom, turmeric or cinnamon as necessary.
*Place the pan on the gas or electric stove, keep the lid open, adjust the heat to medium or slightly higher so that the rice can boil fast until the water level and the rice level are the same. 
*From that stage onward,placed the lid on the pan, the fire reduced to a very low heat so the remaining water is slowly absorbed into the rice, making the rice fluffy and grains separate.  

*If the rice becomes mushy or lumpy add a little oil to the rice and place the rice in an uncovered pan at a low heat for a few minutes.
Rice cooker instructions.
*Put 1 cup of rice in a bowl and wash lightly once but do not over-wash as it will remove the beneficial vitamins and minerals. 
*Place in the rice cooker.
*Add Rice 3-3 1/2 cups cold water.
*Add a little salt and/or a pinch of ghee, butter or coconut or olive oil. For added flavor add peppercorns, cloves, cardamom, turmeric or cinnamon as necessary.
*Plug in the rice cooker, switch on and allow the rice to cook automatically.  
*This will take approximately 30 minutes or so. The automatic rice cooker will shut off itself when the rice is cooked. You need not switch it off as it will keep the rice warm until you use it
